For this week’s What’s Cooking Wednesday, I enlisted our resident office nutrition expert, Nicki for some great healthy recipes!
We discovered last week that you guys had some great New Year’s resolutions! We know a lot of you want to eat healthier, and we hope one of your resolutions is to listen to awesome music
. We can help with both!!
Here are a couple very healthy recipes to start off your year. Comment with your favorite healthy food, for a chance to win “The One You Need” by Shane & Shane AND “Response” by Phil Wickham!
Almond Milk and Berry Smoothie
There are two versions to this smoothie: one for the “Novice Health Nut” and one for the “Crazy Health Guru.” Determine which you think you are, and you can adjust accordingly!
For the Novice Health Nut:
1.5 cups of unsweetened almond milk
1/2 cup berries, or any kind of fruit
Crazy Health Guru Version:
1.5 cups of unsweetened almond milk
1-2 scoops of Whey & Greens protein powder (full of whey protein & vitamins & minerals found in green foods!)
1-2 Tbsp of Chia Seeds (yep, just like a Chia Pet, these little guys pack more fiber & nutrients than Flax Seeds!)
1/2 cup berries – blueberries are exceptionally tasty in this smoothie, but you can do a mix of blueberries, raspberries, strawberries, or even go citrus with mangos. I use frozen berries in the winter months b/c it’s near impossible to find good organic berries
Blend Together on high! This entire smoothie is under 200 calories (with only 1 scoop of protein powder & 1 Tbsp of chia seeds)
Veggie Soup
Great for a light lunch or snack – packed with vitamins & minerals, a
surprising amount of protein & tons of energy!
2 Tbsp Olive Olive
1 Heaping tsp. Garlic Minced
1 Leek – Sliced
Saute in oil – 4-5 min.
Toss in cut-up carrots, sliced celery, green beans and peas. You can even add lima beans, kidney beans, turnip, rutabaga…just choose veggies that won’t alter the flavor of your soup (like kale!) Mix together to coat well. Saute for about 5 more minutes.
Add 2 cartons Vegetable Stock (or Broth, depending on your personal preference)
Add 2 Cups Water
* 1-2 cubes of vegetable bullion cubes
(if you can’t find these, you can always add your own seasoning, like onion & garlic powder, & plenty of sea salt & pepper)
Stir together well put lid on pot and bring to sight boil.
Turn down to med-low heat.
Add chopped Chard
Add Diced Tomatoes
Continue cooking on med-low heat for about an hour with lid on. Keep tasting and adding seasoning to taste.
My favorite new (to me) food is quinoa. It's light and has a slight nutty taste. It's delicious cooked in broth or used in place of rice in almost any recipe. It's also high in protein, which is great for me because I'm a vegetarian.

A bowl of crockpot beans, almost any type and cornbread. Not only is it healthy but an old time goody that saved plenty of people during the Great Depression like my parents. Add some well cooked collard greens and wow!

my favorite healthy food is our green smoothie my family makes every morning, it has lettuce, apples, bananas, spinach etc.

My daughter and I have been enjoying homemade granola bars - oatmeal, honey, cinnamon, nutmeg, craisins, etc. Yum!
My favorite healthy food is Ratatouille! I just found an AMAZING recipe the other day! Oooooooh, and I just discovered Kale chips! Baked Kale with seasoning on top. I love them with garlic salt!
I love homemade veggie soup!
I love Pesto Pasta! The green sauce means that it is low in calories and fat, but still tastes wonderful!
fresh fruit can't be beat!
A lot of recipes can be made over and be healthy recipes. Recipes that are low fat and/or low sugar are much more healthy for you than the original recipe. You can also add flavor to many recipes with additional spices and herbs or a splash of citrus.
mine is not one recipe but a way to make every day food more nutritious. Its especially easy with pasta. We use veggie pasta and add pureed carrots and spinach to our sauce! thickens it up nice and you barely notice a flavor difference. very yummy and nutritious.
Last January when I did a 40 day fast with a friend, we lived on oatmeal, fruit and soup. We used all fresh vegetables for the soup, The recipe consisted of Anise, Kale, Chard, Leeks, Carrots, Celery, Cilantro, Flat Leaf Parsley, Garlic, White Onions with chicken stock, canned tomatoes and canned tomato paste (no salt added variety). It was so delicious, we felt like we were cheating! I have made that soup again since and even though we lived on it for 40 days it was still really good to have it again -and again.
My new favorite healthy food is a chunky tomato bisque, it's so simple and good! 2 cans of diced tomatoes with some half & half and seasoning salt, and garnish with some fresh grated parmesan cheese :)
One of my great eats is a home made Loco Moco, bed if rice, convered with a hambuger, some grilled onions and mushrooms, with an egg, and a little gravy over the dish. great eats whey your hungry. And of course it low in calories. Happy Eating

I loved reading the recipes and the comments so far. I plan to try the soup from Carol above also. I love eating healthy foods, but then i alwasy supplement in the unhealthy. I need to learn to restrict my snacking!

I love spaghetti. Regular spaghetti is okay, but the best spaghetti is strings of zucchini and red sauce. It tastes so much better than regular spaghetti, and with a little salad, it'll fill you up and keep you full!
I am a HUGE fan of baby carrots and fat-free ranch dressing! super tasty, super healthy!
Our favorite new healthy food is pecan-crusted Tilapia. Yummy!
I like fresh berries of any kind. To splurge, I add whipped cream or ice cream.
