Thanksgiving is such a wonderful time of year—the leaves are changing colors, winter jackets are being brought out of the closet, and Starbucks brings back the Pumpkin Spice Latte. The season is all about family, being thankful for one another, and enjoying each other’s company. Our main memories of Thanksgiving stem from sitting around the table with our families and friends with turkey, dressing, green bean casserole, yams, rolls, cranberry sauce, and pumpkin pie covering the entire dining room table. It is the one time of the year that all diets and healthy habits are thrown aside, and we can officially indulge ourselves. I mean come on it’s called the holiday season for a reason, right?
But when the big meal is over, do you ever wonder, “What am I going to do with all of these leftovers?” Generally, both of our families overcook every Thanksgiving, so there are enough leftovers for a few days, and after a while the regular turkey sandwich just doesn’t cut it. I'm a big fan of both turkey noodle soup and turkey enchiladas! Those are two staples every year after Thanksgiving for us.
I love an open-faced hot turkey sandwich with toast on the bottom, mashed potatoes, turkey & gravy. It's like reliving the Thanksgiving meal over again in a different way!
I like cutting up the turkey in small pieces, pan fry the turkey, then put it over a pile of rice , then place a fried egg over it and pour gravy over for the final touch, Its not the say old leftover turkey meal but a new meal with leftovers.

I just love to eat leftovers...period! I also like a hot turkey sandwich. Take some potato bread, throw a couple of turkey slices on there and warm it up. Them, add some taters and slather it with gravy. Perfect!
I like to use the mashed potatoes in potato pancakes and the turkey in tueirkey tetrazzini (which I do not know how to spell, I'm not sure about potatoes either :))
i LOVE ( and my family loves eating them) making my home aid potato chips! there really easy and really good!=) my brother is really picky but he loves them!
I love making a turkey melt out of the leftover turkey, and Swiss cheese. Top it off with a tomato, with sweet potato casserole on the side! Pecan or pumpkin pie leftovers for dessert.
I like tossing my leftover turkey and gravy into a wonderful turkey and dumpling soup. Also like taking leftover turkey and mixing it with some mole sauce to make a great tamale filling. Of course nothing beats the all time hands down favorite leftover sammich; turkey, stuffing, mashed taters, cheese and bacon on homemade sourdough sage onion bread.
I love to reheat a little of everything on a plate and have a mini- Thanksgiving meal all over again. My favorites are sweet potato casserole and broccoli casserole!

We have a quesadilla maker, and leftover pulled/chopped turkey makes for a great quesadilla! If you've got fresh tomatoes or other vegetables left over, you can add those as well. 'Course, a good cold turkey sandwich works pretty well as a backup.
To Me: There's absolutely nothing better, in this world, than leftover turkey - thin sliced, with lettuce, tomatoes, cranberry sauce and miracle whip - served on a warm kiaser roll bun! Mmmmmmm - Mmmmmmm! Enjoy The Holidays!

Southwestern Turkey Soup: Combine 3 cups cubed turkey with 1 can chicken broth, 1 onion (chopped), 3 tsp. ground cumin, 1 1/2 tsp. chili powder, 1/4 tsp. salt, 1/4 tsp. cayenne pepper, 1 can black beans (rinsed and drained), 1 can diced tomatoes and green chilies, and 1 1/2 cups frozen corn. Bring to a boil; reduce heat and simmer for 20-30 minutes. Garnish with sour cream, crushed tortilla chips, shredded Mexican cheese, and black olives, sliced.
I make Turkey Pot Pies and fresh Turkey Soup. Every year I buy an extra turkey so I can use it completely for leftover purposes.
OK, I'm probably weird, but I like to just snack on cold turkey after Thanksgiving. I'll be working on something and just grab a piece. Or I'll be watching the game and grab a few pieces. Cold turkey just flat out rocks on it's own.
Just give me the plain old turkey sandwich. I'm not very imaginitive when it comes to leftovers, I guess - however, i'll have to try Todd's recipe. It sounds and looks fantastic!

I like to take the carcass and the neck etc., and boil it. This creates a really good broth to cook up some veggies and pasta, yummmm!
One of the family favorites and tradition is *Turkey Over Toast*. Possibly one of the most simple of post-Thanksgiving treats, all you do is make (or use what you have left over) some white pepper gravy and add in your turkey. Stir it up and make it hot on the stove, toast some buns and serve it piping hot with stuffing and anything else you want on it. It is the perfect dish to make after those Black Friday deals and takes just a few minutes to make! Love it!

It's a toss up between turkey & noodles and turkey salad. Yummmm!
